Healthy Sweet Desert Recipes


Sometimes some of the simplest recipes turn out to be my favorites. And it is a good thing, since I hate to cook or bake. If you like chocolate like I do, but don't want the chemical junk that usually accompanies it, these recipes are for you.

Chocolate Candy

Here is the simplest chocolate recipe that all other treats can be based off of. It is Candida friendly, Paleo friendly, and any other diet you can think of friendly. These recipes contains no sugar. (T =Tablespoon, t = Teaspoon)

1 1/2 Cups Coconut Oil (antibacterial properties)

1 Cup Cacao Powder (Super food)

1 t Vanilla Extract

4 packets Stevia Sweetener

Heat on the stove, mixing all the ingredients. Then refrigerate. Coconut oil hardens as it cools and melts when it's hot.

Once you have this chocolate mixture, you can create many other candy recipes.

Reese's Style Peanut Butter Cups

Use above recipe to create the chocolate mixture by heating over the stove. Pour the chocolate into a candy mold of your choice, just covering the bottom (about 1/4 full) then freeze for a half an hour. Once it hardens, remove and add a small spoonful of Almond Butter, then add more chocolate over the top filling the entire mold. Return to freezer until hardened. Then take them out and store in the fridge. Chocolate Almond Butter Cups!

The difference between peanut butter and almond butter is the amount of mold present in nuts themselves. The mold creates a dampening and possible fungal issues in the body. That is why there are so many peanut allergies. Candida sufferers are allowed certain nuts like pecans, walnuts and almonds but not others like peanuts and cashews. Almond butter is a better choice. Sprouted would be best, but I have yet to find sprouted almond butter in the stores. If you're good in the kitchen, try making your own from sprouted almond nuts.

Almond Joy Style Candy

1. Chocolate - Use the same chocolate recipe above.

2. Coconut Flakes - Natural unsweetened coconut flakes

3. Almonds - (sprouted, no salt)

3. Syrup

1 T Coconut Butter

1 t Vanilla Extract

6 drops of liquid Stevia Sweetener

1 pinch of Cinnamon

1 pinch of Salt

Grind up coconut flakes in high powdered blender or food processor until a pasty consistency. Pour syrup over coconut flakes. Once again, pour chocolate mixture into candy mold about 1/4 full, freeze for a half an hour. Pull out and put a layer of sweetened coconut flakes on top plus a piece of almond cut in half, refreeze for another half an hour. Remove and pour remaining chocolate mixture into candy mold over coconut. Refreeze. Take out and store in the fridge. Almond Joys!

Fudge

1 1/2 Cups Cacao

1/2 Cup Evaporated Coconut Milk (unsweetened)

2 T Coconut Oil

Chopped Walnuts (optional)

Heat all ingredients. Add nuts and freeze.

Chocolate Pudding

2 Medium Avocados (Super Food)

1 15 oz Can Coconut Milk (unsweetened)

1 1/2 t Cinnamon (anti-bacterial, anti-fungal properties)

3 oz Cacao (Super Food)

1 t Vanilla

4 Packets Stevia Powdered Sweetener

Heat and then refrigerate. The avocados have a mild flavor and create a creamy texture when used in desserts. There are many recipes online for chocolate cake and frosting using Avocados so check them out.

Hot Cocoa

1 Cup Coconut Milk (unsweetened)

2 t Cacao Powder

1 t Vanilla

6 drops Liquid Stevia

Cinnamon or Mint (optional)

Heat ingredients. Bring to low boil for 3 minutes.

Can you see the pattern here! Once you get the basics down you can make anything you want. Experiment with regular recipes by exchanging unhealthy choices with healthy ones. My son doesn't like bitter chocolate so he is less likely to eat some of these treats. What I have done is ease my kids in with less sweetened ingredients to more bitter choices. Taste buds change and you get more and more used to different flavors. I can't even eat deserts that are too sweet since my taste buds have changed. Here are some suggestions to help your family transition to healthier choices:

Maple Syrup (53g sugar).................Honey (16g sugar)..................Stevia Syrup recipe (0g sugar) See above (6 drops stevia, cinnamon, vanilla, salt, coconut butter)

White sugar.....................................Brown sugar.............................Stevia Sweetener

Milk Chocolate................................Carob......................................Cacao

Peanut Butter...................................................................................Almond Butter

Vegetable Oil..................................Olive Oil..................................Coconut oil or Avocado Oil

Milk...................................................Raw Milk..................................Coconut Milk or Almond Milk

Butter................................................Raw Butter...............................Coconut Butter

Table Salt.........................................Sea Salt.....................................Himalayan or Celtic Salt

Dump the artificial flavors and color in store bought ice cream and Popsicles and make your own. Here are some suggestions for yummy fruit popsicles: You can use the above chocolate recipe to drip over it making it extra yummy.

Fruit Pops

1/4 Cup Plain Yogurt

1/2 Cup Coconut/Almond Milk

5 oz fruit Any combination you want (Kiwi/lime, blueberry/strawberry/raspberry or pineapple/banana/strawberry)

Mix all ingredients in a blender and freeze in Popsicle molds. Great in the summer.
